Very Old-School Negroni

Years ago, I was at the Sovereign in DC for Negroni Week. They only had genever and were making Negroni variations with it. My favorite was one made with Cappelletti. I unfortunately did not get the full recipe and have been trying to replicate it ever since. The closest I’ve come is a drink at Trick Dog in SF:

Equal part: Genever, Cocchi Torino, Cappelletti
Spritz of strawberry absinthe bitters

Unfortunately for me, I have neither Cocchi Torino or strawberry absinthe bitters! One of the struggles with using Cappelletti is that it’s much sweeter than Campari, so if you sub it straight in a traditional Negroni, the drink is incredibly sweet! So here’s my variation with what’s in house:

1 oz Wigle’s Ginever

1 oz Del Professore Classico

1 oz Cappelletti

Dash of Orange Flower Water

This turned out to be not too sweet since the Classico is more muted than the Rosso. The name is because Cappelletti is the oldest classic red bitter and genever is the predecessor to gin.
